Ingredients of Aloo Kachori Recipe
For 15 kachori
For Dough
- 3 cups wheat flour
- 2 tsp salt
- 1 tsp carom seeds
- oil for moan
For filling
- 6-8 pcs Boiled Potato
- 1 tbsp Oil
- 1/4 tsp Asafoetida
- 1/4 cup Gram Flour/Besan
- 1 tbsp Grated Ginger
- 2 pcs Chopped Green Chili
- 1 tsp saunf
- 1/2 tsp Black Salt
- 1/2 tsp Aamchoor Powder
- 1 tsp chat masala
- 2 tbsp chopped Coriander
Oil for frying

Instructions
Dough
- To make this amazing Aloo Kachori, first take a bowl and add 2 cups of wheat flour.
- Now add 1 tsp of salt, 1 tsp of carom seeds, 1/4 cup of oil, and mix everything well with your hands.
- Now, little by little, add water and prepare a soft dough.
- Now, cover the dough with a wet cloth and let it rest for 10 minutes.
Masala for Filling
- Take a grinding jar and add 2 tbsp of coriander seeds, four dry red chillies, 1 tbsp of fennel seeds, 1 tbsp of peppercorn, 1 tbsp of cumin seeds.
- Now grind everything well and make a coarse powder.
- Take four boiled and peeled potatoes.
- Now, mash the potato with a masher.
Preparing filling
- Place a pan on flame, add 1 tbsp of oil, and heat well.
- After the oil is hot, add prepared masala powder into the pan, mix well, and roast on low flame.
- After some seconds, add 1/4 tsp of gram flour and mix well, and roast.
- Now add 1/4 tsp of asafoetida, 1 tbsp of grated ginger, two chopped green chilli, mix everything well, and roast.
- After roasting everything well, add mashed potato into the pan and mix well.
- Now add 1/2 tsp of red chilli powder, 1 tsp of garam masala, 1/2 tsp of cumin powder, 1/2 tsp of turmeric powder, salt as per taste, 1/2 tsp of black salt, 1/2 tsp of dry mango powder.
- Add finely chopped green coriander and mix everything well.
- Now, turn off the flame and transfer the mix to a bowl and let it cool.

Making Kachoris
- Prepare a small balls with stuffing mix.
- Check the dough and knead well one more time.

- Take prepared small round balls with the dough like the following image.
- Take one ball of dough, flatten it with your fingers, and make it like a bowl.

- Place a stuffing ball into it, close it from all sides, press on it with your hands, and prepare a kachori.
- Then prepare Kachori from the remaining dough and stuffing.

- Place a pan on flame and heat well on low, medium flame.
- Roasting them before frying helps making them less oily.

- Roast all the kachoris and let them cool.

- When you want to serve heat them in oil.
- One by one, add prepared Kachori to the oil and fry well on low, medium flame.
- After some time, splash the hot oil on Kachori, turn it to another side, and fry well until golden and crispy.
- After Kachori turns golden crisp, transfer them to a plate and fry the next batch.

- Your Crispy Aloo Kachori is completely ready, and you can enjoy them.
