Carrot and walnut cake

Carrot and walnut cake is nostalgia for me, it has all childhood memories when it comes to cake. This is the first cake i learnt making from my mom and she use to make it so nice that it use to be in demand in her office as well as among relatives. Using the traditional circular oven, cake making use to be an event in my house. This cake was a winter specialty and she always use to make it for my Capricorn winter birthday.

The aroma of freshly baked carrot cake still makes me nostalgic to all my childhood cake experiments and memories. I learnt this cake while helping my mom in kitchen as this was the only thing i was seen in kitchen those days.

Ingredients

Maida – 3 cups
Baking soda – 2tsp
Salt -1tsp
Powdered sugar – 1.5 cups
Refined oil – 1.5 cups
Eggs – 3
Grated carrot – 2 cups
cardamon powder – 1 tsp
vanilla essence – 2 tsp
Walnuts – handful

METHOD

First of all, sieve the maida, soda, and salt 5-6 times

The more you sieve the more fluffy cake it will be as this way we incorporate air in mixture.

Then in another bowl, mix oil, sugar and then add eggs one by one and beat till fluffy.

Add vanilla essence, grated carrot and beat again.

Finally add the maida mix and walnuts and with lil more beating the batter is ready to bake.

Bake this batter for 60mins at 230 degree preheated oven.
